Recipe: Vitamin salad with beetroot and almonds

Beetroot on lettuce with almond slices

Ingredients:

  • 1 larger beetroot and young beet greens
  • 2 handfuls of your favorite lettuce leaves  
  • 1 smaller handful of almond slices
  • 1 spoonful of ground hemp seeds
  • 5 pcs of dried dates
  • Juice of ½ lime
  • A splash of water

Method:

Beetroot on lettuce with almond slices

  1. Cut off the beet greens, and cook the beetroot until tender.
  2. Add the washed beet greens to the other leaves of lettuces.
  3. Pre-soak the dates.
  4. Mix the soaked dates with the water (in which they were soaked) and lime juice until smooth.
  5. Spread the lettuce leaves and the diced cooked beetroot on a plate.
  6. Pour the date dressing over it and decorate with almonds and hemp seeds.

TIP: You can serve the salad with whole meal bread/rolls.
