RECIPE: Almond Linz cookies with chia marmalade

Almond Linz cookies with chia marmalade

Ingredients for about 20 large cookies:


  • 100 g of almond milk leftovers
  • 80 g of ground almonds
  • 60 g of ground coconut
  • ½ tsp of cinnamon
  • Pinch of vanilla powder
  • 12 dates
  • 1 tbsp of coconut oil

Chia marmalade

  • 100 g of raspberries
  • Pinch of vanilla powder
  • 1 tbsp of maple syrup
  • 1 tbsp of chia seeds


  1. Prepare the almond milk (based on the instructions below).
  2. Soak the dates in water for at least 30 minutes in advance.
  3. Grind the almonds (if they are not already ground), or buy ground almonds or almond flour.
  4. Preheat the oven to 160 degrees Celsius.
  5. Mix the almond flour with the coconut, cinnamon, vanilla powder and almond milk leftovers in a bowl.
  6. Blend the dates with a bit of water into a smooth date puree, mix in the hot coconut oil and add to the dry mix.
  7. Knead into a compact dough and place into the fridge to cool.
  8. In the meantime, prepare the marmalade. Boil the raspberries, flavour with vanilla powder and maple syrup and add the chia seeds. Remove from the stove. Let the mixture cool and place it in the fridge.
  9. Roll out the dough into a thicker layer. Cut out the shapes of your choice.
  10. Bake in the preheated oven for about 15 minutes. After the cookies cool, spread them with the prepared chia marmalade, join and it’s finished :)

Don’t forget to drink the rest of the almond milk! It is excellent and full of quality proteins, fibre, vitamins A, D and E, calcium, iron... and many other valuable substances.

Instructions to prepare home-made almond milk:

To prepare almond milk:

  1. Soak 1 cup of almonds in water for at least 4 hours.
  2. Then rinse them and cover with 3 cups of (filtered) water.
  3. Then blend the almonds using a stick mixer and strain through a clean cloth. You can also use a fine sieve.
  4. Finally, you can sweeten the milk with syrup, flavour it with vanilla powder, cocoa powder, etc.

Store in the fridge and consume within 4 days. Always shake the milk before consuming.
